Recipe: Scallops, Roquefort & Walnut Parcels

This is our quickest recipe and it is perfect for a starter, main course, or canapé. The combination of blue cheese, nut and lemony seafood is mouth-watering, requires little to no washing up and is cheap. Scallops are muscles which contain almost no carbs or fats. Consequently, they are low in calories. Furthermore, they contain plenty of omega-3, magnesium, potassium, phosphorus, selenium, sodium and choline. The dairy sources contain saturated fat, cholesterol, calcium, B12, zinc and riboflavin, all fantastic health improving nutrients. They also significantly increase nutrient absorption and flavour. Chicory is an excellent prebiotic, one of your 5 a day (don't stop at 5 only - vegetables that is, not chicory) and acts as the perfect edible plate to keep your hands clean. The flavour of the chicory leaves complements the creaminess of the cheese, the nuttiness of the walnut and the citrusy shellfish. Walnuts add a delicious crunch to every bite and also contain healthy fats which provide lasting energy.

Ingredients

30g roquefort cheese

6 scallops

6 walnut halves

6 chicory leaves

1 tbsp butter

1 tbsp freshly squeezed lemon juice

Pinch of sea salt and ground black pepper


Instructions

1. Melt butter on high heat in a non-stick frying pan. When the pan is very hot, place scallops one at a time clockwise into pan. Season with salt and pepper. Cook for 60s each side. Season other side with salt and pepper.

2. Divide the cheese into 6 equal pieces and serve 1 scallop, 1 piece of cheese and 1 walnut half onto each chicory leaf. Squeeze lemon juice onto each one.

3. Consume within 1 day.
